STORY: “DelAgua Coffees are produced in La Sierra Nevada de Santa Marta in Colombia. Our coffees are the result of a collaboration between our team and local coffee growers that inhabit our region. By adopting the Neighbors & Crops relationship coffee model from La Palma & El Tucan, we have been able to challenge the status quo and positively impact traditional coffee farmers at La Sierra Nevada.
Water has become their greatest treasure and its conservation, their purpose. As challenging as this statement is when it comes to producing coffee, they have called this their mission. This project provides coffees through a community–based model using the minimum amount of water in their processing methods while encouraging their team and the traditional coffee growers to become the guardians of biodiversity.”
Here is the project standard by which all producers at DelAgua operate:
The pristine water flowing all aroundus here in the Sierra Nevada de Santa Marta serves as a constant reminderof our mission. Protecting our water systems is what drives us forward in everything we do. Our processing methods are a direct reflection of this mission. By producing natural and honey coffees only, we can save approximately 880, 294 liters every harvest. It takes a heightened commitment at every stage, but we wouldn’t have it any other way.
This coffee is exclusive to Weathered Hands Coffee for this harvest year and we can’t be more excited! No where else can you get this amazing coffee by producer, Oliver Cortez. We are honored to be able to share this coffee and support such a wonderful project.
This coffee was fermented in bins with degassing valves for 90 hours and then patio dried for 10 days. It then sat in grainpro bags for up to 40 days before being processed.
We roast and ship every Monday & Thursday. Orders must be received by 5PM on Sunday and Wednesday to ensure it gets added to our production. Orders placed after 5PM on on Sunday and Wednesday will be roasted and shipped out the next production day.
