STORY: Finca Loma Linda is located in Santa María; Huila, Colombia and run by Luis Vicente Hernandez. The farm sits at an elevation of 2,100 m.a.s.l. and consists of 10 acres. Don Luis grows 4,000 trees of Caturra, 2,500 trees of Yellow Bourbon and 1,200 trees of Variedad Colombia. He is a member of our Allied Producer Program and currently one of the more advanced producers in The Coffee Quest’s network. He has been experimenting with different processes, including various yeast inoculation trials. This particular lot is the result of some of those trials.

This lot is a blend of Caturra and Colombia inoculated with combination of Intenso and Oro yeast from LALCAFÉ, dry-fermented for 80 hours and then dried on raised African beds for between 10-15 days (depending on the weather). With the use of yeast, the goal is to provide micro-organisms selected from nature that are able to improve the control of fermentation process and to optimize the quality of the final product.

LALCAFÉ ORO™ can be used to either increase mill efficiency or enhance cup quality with extended fermentations. While, LALCAFÉ INTENSO™ coffee yeast can enhance mouthfeel, floral aromas, and tropical fruit notes. It is most notable for the development of overall complexity in the cup.

LALCAFÉ is a multinational cross functional team spanning from research, technical sales support and product management. The team has a combined experience in coffee processing, microbiology and fermentation technology. LALCAFÉ is proud to offer the coffee producing community tools that can assist them in improving their production processes and the quality of their coffee.

Luis Vicente says he has been farming basically his entire life. He started helping out his parents at a young age and his father gave him real tasks to teach him and his brother work ethic. After he graduated from school, he was working as a day laborer and also sold onions, cassava (yuca) and fruits to make a living. Approximately 9 years ago, he started growing coffee on his own farm and he also grows corn, cassava (yuca), beans and bananas.

Luis Vicente is a Father to 3 children and feels very proud and lucky that all of his children want to continue with the coffee tradition, keeping his legacy alive in the future.
